One: Simple and Fast
- 1 pound walleye fillet
- 1 teaspoon salt
- Pepper as needed
- 3 tablespoons butter
Place in a baking dish and add the ingredients. Cook at 400 degrees for 15-20 minutes. Mix vegetables and steam while the fish cooks for a well balanced meal.
Two: Lemon Butter Baked Walleye
- 1/4 cup butter melted
- 3 cloves of minced garlic
- 2 tablespoons freshly squeezed lemon juice
- 20 ounce walleye fillet
- Kosher salt and ground black pepper
- 2 tablespoons parsley
Mix the butter, garlic, and lemon juice. Place the walleye in a pan. Season the fish with the salt, pepper, and parsley and add the butter mix. Cook at 425 degrees for 10-12 minutes or until the walleye flakes. This is a tasty meal that won’t pack on pounds.
Three: Mustard and Honey Baked Walleye
- 3 tablespoons honey
- 3 tablespoons Dijon mustard
- Pepper to taste
- 1 teaspoon lemon juice
- 24 ounce walleye fillet
Mix everything but the pepper in a bowl and add to the walleye in a baking pan. Top with pepper. Bake at 325 degrees for 20 minutes or until the fish flakes. Serve with a baked potato and vegetables for a delicious meal.
Four: Baked Crispy Walleye
- 1 cup panko bread crumbs
- 3 tablespoons virgin olive oil
- 24 ounce walleye fillets
- Ground black pepper
- Lemon wedge
Heat oven to 425. Mix the breadcrumbs and 1 tablespoon of olive oil. Spread it on the bottom of a baking pan. Bake until it is brown and place it back in a bowl. Mix in the salt and pepper. Roll the walleye in the breadcrumbs until covered. Place the fillets in the pan and add the remaining 2 tablespoons of olive oil. Bake for 15 minutes or until the fish flakes. Serve with the fresh lemon wedge.

- 1/3 cup Greek olive oil
- 1 small chopped red onion
- 2 tomatoes diced
- 10 garlic chopped garlic cloves
- 1.5 teaspoons ground coriander
- 1 teaspoon Spanish papricka
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1.5 tablespoon capers
- Salt and Pepper
- 1/3 cup raisins
- 1.5 pounds of walleye fillets
- Lemon juice
- Fresh parsley
Prepare the tomatoes and capers sauce. Heat the olive oil on medium and add the onions. Cook until you get some color. Add the tomatoes, garlic, spices, salt and pepper, capers, and raisins. Boil then let simmer. Add 1/2 of the sauce to a baking pan and top with the walleye. Sprinkle lemon juice on the fish then add the rest of the sauce to the pan. Bake at 400 degrees for 15-18 minutes. Serve with your favorite Greek salad or side.
